The Guatemalan Ixlama is a cooperative of farmers in Huehuetenango that has been working together for nearly 50 years! Made up of almost 120 families, when the coffee is brought to the mill, it is fully washed, dried on cement patios for 4 days and then sorted. The coffee is mechanically sorted by density, resulting in a nearly flawless coffee. Clean, sweet and a great coffee for brewing daily.
